Step-by-Step Instructions for Lentil Stew

  • Heat 1 teaspoon of olive oil in a large saucepan over medium heat. Add 1 chopped medium onion and sauté for 5 minutes until translucent.
  • Incorporate 3 minced garlic cloves, 0.5 teaspoon of turmeric, and 1 teaspoon of paprika into the saucepan. Cook for another minute, stirring constantly.
  • Add 2 sliced medium carrots, 1 large russet potato, and 1.5 cups of dry brown lentils to the pot. Stir in 2 tablespoons of tomato paste, 4 cups of vegetable broth, 0.5 tablespoon of Italian seasoning, 0.5 teaspoon of salt, and 0.5 teaspoon of ground black pepper.
  • Bring the mixture to a boil, then reduce heat and cover. Allow to simmer for 35-40 minutes, checking occasionally for tenderness.
