For the Sauce

  • ¼ cup Soy sauce as a savory base
  • 2 tablespoons Honey to balance the saltiness
  • 1 tablespoon Rice vinegar for a touch of acidity
  • 1 teaspoon Sesame oil for a nutty flavor
  • 1 clove Garlic minced
  • 1 teaspoon Fresh ginger grated
  • 1 tablespoon Sesame seeds optional, for texture

Step-by-Step Instructions

  • In a small bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, minced garlic, and grated ginger to create the marinade. Place the flank steak in a resealable plastic bag or shallow dish and pour the marinade over it. Seal and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours.
  • Slice the zucchinis into ½ inch thick rounds and place them in a mixing bowl. Drizzle with olive oil and season with garlic powder, onion powder, smoked paprika, salt, and pepper. Toss gently until evenly coated.
  • Heat your grill to a medium-high temperature of around 400°F (200°C). Remove the marinated steak and let excess marinade drip off. Cook the steak for about 4-5 minutes per side to reach medium-rare.
  • After turning the steak, place the zucchini rounds on the grill alongside it. Grill for approximately 3-4 minutes on each side until fork-tender.
  • Once cooked, remove the steak from the grill and let it rest for about 5 minutes.
  • Thinly slice the rested steak against the grain. To assemble your bowl, start with a base of cooked brown rice or quinoa, layer with sliced steak, grilled zucchini, halved cherry tomatoes, and sliced avocado.
  • Drizzle reserved marinade sauce over the assembled bowls, sprinkle with sesame seeds and fresh cilantro, and serve with lime wedges.

Notes

Aim for at least 30 minutes marinading time; 2 hours is ideal for best flavor. Always slice steak against the grain to ensure tenderness.
