For the Brownies

  • 2 boxes Brownie mix Use (18.3 ounce) boxes with specified ingredients
  • ½ cup Creamy peanut butter
  • 4 tablespoons Unsalted butter at room temperature
  • ½ cup Light brown sugar
  • 4 tablespoons Granulated sugar
  • 2 large Eggs
  • 1 teaspoon Pure vanilla extract
  • ½ cup All-purpose flour
  • ½ teaspoon Baking soda
  • ½ teaspoon Kosher salt
  • ½ cup Quick cooking oats
  • ½ cup Miniature chocolate chips
  • 1 cup Halloween sprinkles

For the Frosting

  • ½ cup Unsalted butter at room temperature
  • 2 cups Confectioners sugar
  • 2 teaspoons Pure vanilla extract
  • 2 tablespoons Heavy whipping cream
  • Neon green gel food coloring a few drops
  • 1 package Candy eye decorations

Preparation Steps

  • Preheat your oven to 350°F (177°C) and prepare the baking pan.
  • In a large mixing bowl, combine the brownie mix with specified ingredients and stir until smooth.
  • Cream together peanut butter and unsalted butter until fluffy.
  • Add sugars, eggs, and vanilla extract to the creamed mixture; beat until combined.
  • In another bowl, whisk together flour, baking soda, and salt; add oats and chocolate chips.
  • Fold dry ingredients into the peanut butter mixture until just combined.
  • Drop spoonfuls of the mixture over the brownie batter and spread evenly.
  • Sprinkle Halloween sprinkles and candy eyes over the top.
  • Bake for 25-30 minutes; check for doneness with a toothpick.
  • Allow to cool for at least 30 minutes before removing from the pan.
  • For frosting, beat together butter, confectioners sugar, vanilla, and cream until creamy.
  • Add food coloring and mix; then pipe onto the cooled brownies and add candy eyes.
  • Let the frosting set, then slice and serve.

Notes

For best results, avoid overmixing the peanut butter layer to maintain a chewy texture. Always use room temperature butter for a perfect blend.
