For the Shrimp

  • ¼ cup garlic, minced The star ingredient that brings a burst of flavor to your dish.
  • ¼ cup shrimp, peeled and deveined Fresh shrimp is key for a succulent texture.
  • Additional proteins (chicken or vegetables) Feel free to customize your mofongo for a heartier meal!

Step-by-Step Instructions

  • Start by peeling the ripe plantains and slicing them into thick rounds, about 1-inch thick.
  • In your large skillet, pour in the ½ cup of olive oil and heat it over medium heat until shimmering, roughly 2-3 minutes.
  • Carefully add the sliced plantains to the skillet. Fry them for about 3-5 minutes on each side, until they turn a beautiful golden brown.
  • Once the plantains are perfectly golden, use a slotted spatula to remove them from the skillet and transfer them onto paper towels.
  • In the same skillet, keep the heat at medium and add your minced garlic, stirring it lightly for about 30 seconds until fragrant.
  • Add the shrimp and sauté until they turn pink and are fully cooked, roughly 3-4 minutes.
  • In a large bowl, mash the drained fried plantains with a fork or potato masher until smooth.
  • Gently fold the sautéed garlic and shrimp mixture into the mashed plantains until combined.
  • Dish out your Garlic Shrimp Mofongo while it’s warm, garnishing with fresh herbs if desired.

Notes

Store leftovers in an airtight container for up to 3 days in the fridge. For freezing, place cooled Garlic Shrimp Mofongo in a freezer-safe container for up to 2 months.
