Step-by-Step Instructions

  • Whisk together flour, yeast, and salt. Gradually add water and olive oil until a shaggy dough forms.
  • Knead the dough on a floured surface for 5-7 minutes until smooth and elastic.
  • Place the dough in an oiled bowl, cover, and let rise for 1 to 1.5 hours until doubled.
  • Combine minced garlic and chopped rosemary in a bowl.
  • Once risen, punch down the dough, roll it out to a 12x18 inch rectangle.
  • Sprinkle the garlic and rosemary mixture on the dough, pressing gently.
  • Roll the dough tightly into a log and cut into 12 equal pieces.
  • Grease a muffin tin with olive oil and place one piece in each cup.
  • Cover and let the muffins proof for 30-45 minutes until puffed.
  • Preheat the oven to 400°F (200°C).
  • Dimple the tops of each muffin, drizzle with olive oil, and sprinkle with salt.
  • Bake for 20-25 minutes until golden brown.
  • Cool for a few minutes in the tin before transferring to a wire rack.
