Ingredients
  

For the Salsa

  • 1 pound tomatillos husked and rinsed
  • 1 medium onion quartered
  • 2 cloves garlic unpeeled
  • 1-2 pieces jalapeños stems removed
  • ½ cup fresh cilantro leaves tightly packed
  • 1 Juice lime
  • salt to taste
  • 1 tablespoon olive oil optional

Preparation Steps

  • Preheat the oven to 425°F (220°C).
  • Arrange the tomatillos, onion, and garlic in a baking dish.
  • Roast for 15-20 minutes until tomatillos soften and char slightly.
  • Allow to cool, then peel the garlic.
  • Blend the roasted ingredients with cilantro and lime juice until smooth.
  • Season with salt and optional olive oil, blend briefly.
  • Serve immediately or chill for at least an hour before serving.

Notes

This salsa is great for tacos, chips, or as a marinade for grilled meats. Refrigerate leftovers in a sealed container for up to a week.
