Ingredients
  

Salad Ingredients

  • 2 cups mixed salad greens arugula, spinach, and romaine
  • 1 cup cooked chicken breast diced
  • ½ cup dried cranberries
  • ½ cup feta cheese crumbled
  • ¼ cup chopped pecans or walnuts
  • 1 medium apple diced, tart variety like Granny Smith
  • ½ medium red onion thinly sliced

Dressing

  • ¼ cup balsamic vinaigrette

Preparation

  • Wash and thoroughly dry the mixed salad greens, placing them into a large salad bowl.
  • If using raw chicken breast, season and grill or sauté until fully cooked, then dice.
  • Dice the apple, keeping the skin on, and set aside.
  • Thinly slice the red onion and add it to the salad bowl.
  • Combine the diced chicken, dried cranberries, and nuts into the salad bowl.
  • Sprinkle crumbled feta cheese over the salad.
  • Drizzle balsamic vinaigrette over the salad and toss to combine.
  • Taste and adjust seasoning if necessary.
  • Serve immediately or refrigerate for up to 30 minutes before serving.
