Equipment

  • Oven
  • baking sheet
  • mixing bowl

Ingredients

For the Topping

  • 4 cups Ripe Roma tomatoes, diced Heirloom tomatoes can be a delightful alternative.
  • 2 cloves Fresh garlic, minced Minced garlic can offer a more pronounced flavor.
  • 1 cup Fresh basil, chiffonade Dried basil is a possible substitute, but fresh is recommended.
  • ½ cup Parmesan cheese, grated Leave it out for a vegan option or use vegan cheese instead.
  • 2 tablespoons Balsamic vinegar Red wine vinegar can be an effective substitute.
  • 1 teaspoon Kosher salt Feel free to adjust to your preference.
  • ½ teaspoon Freshly ground black pepper Consider adding other spices for boldness.

For the Bread

  • 1 loaf French bread, sliced Ciabatta or other crusty bread types work wonderfully too.
  • 2 tablespoons Extra virgin olive oil Substitute with another quality oil if needed.

Instructions

Step-by-Step Instructions

  • Preheat the oven to 400°F (200°C) and prepare a baking sheet lined with parchment paper for easy cleanup.
  • Slice the French bread into ½-inch thick pieces and arrange them in a single layer on the prepared baking sheet. Brush each slice with olive oil. Toast in the oven for 5-7 minutes until crisp and golden.
  • In a large mixing bowl, combine the diced tomatoes, minced garlic, grated Parmesan, balsamic vinegar, salt, black pepper, and basil. Drizzle with more olive oil and mix until well combined.
  • Remove toasted bread from the oven and let it cool slightly. Spoon the tomato mixture onto each slice just before serving.
  • Serve the assembled bruschetta on a platter, garnishing with extra basil or a drizzle of balsamic glaze for added elegance.

Notes

For best flavor, let the tomato topping sit for 10-15 minutes before serving. Assemble bruschetta just before serving to avoid sogginess. If you have leftovers, store topping separately in an airtight container for up to 2 days.
