For the Topping

  • 8 slices Crusty French bread or baguette
  • 2 cups Gruyère cheese grated or Swiss cheese
  • Fresh parsley chopped, for garnish

  • Preheat the oven to 300°F (150°C). Gather ingredients.
  • In a large pot, heat olive oil and butter over medium heat. Add beef short ribs seasoned with salt and pepper, sear until golden brown, about 4-5 minutes per side. Remove and set aside.
  • In the same pot, add sliced onions, sugar, salt, and black pepper. Cook over medium-low heat, stirring occasionally, until deep golden brown, about 30-40 minutes.
  • Add minced garlic to caramelized onions, cook for 1-2 minutes until fragrant.
  • Deglaze the pot with dry white wine, scraping the bottom. Simmer for 5 minutes.
  • Add beef broth, Worcestershire sauce, thyme, and bay leaf. Return beef short ribs to the pot and bring to a gentle boil. Cover and transfer to the oven.
  • Cook for 2 to 2.5 hours until beef is tender. Check liquid levels occasionally.
  • Remove beef, shred with forks, and return to pot. Stir to combine.
  • Preheat broiler. Place a slice of bread in each bowl, top with Gruyère cheese.
  • Broil for 2-4 minutes until cheese is bubbling and golden.
  • Garnish with chopped parsley and serve hot.
