  • 2 teaspoons fresh thyme leaves
  • 2 leaves bay leaves
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper

For the Cheesy Topping

  • 1 loaf crusty bread French or Italian
  • 2 cups Gruyère cheese shredded
  • 1 cup mozzarella cheese shredded

For Garnish

  • 2 tablespoons fresh parsley chopped

Step-by-Step Instructions

  • Season the beef chuck cubes with salt and pepper. Heat olive oil in a large Dutch oven over medium-high heat. Brown the beef in batches for 4-5 minutes.
  • In the same pot, add the sliced onions and cook over medium heat, stirring frequently for 20-25 minutes until caramelized. Add minced garlic in the last 5 minutes.
  • Stir in tomato paste and cook for an additional 2-3 minutes until fragrant.
  • Pour in the red wine, scrape browned bits from the pot, and simmer for 3-5 minutes.
  • Return the browned beef, add beef broth, thyme, and bay leaves. Simmer, cover, and reduce heat to low for 1.5 to 2 hours.
  • About 20 minutes before serving, preheat your oven to 350°F (175°C). Slice the crusty bread into thick pieces and arrange on a baking sheet.
  • Remove the bay leaves, adjust seasoning, and ladle the stew into oven-safe bowls.
  • Top the stew with sliced bread and sprinkle with Gruyère and mozzarella cheese.
  • Bake in the oven for 15-20 minutes until cheese is bubbly and golden brown.
  • Garnish with chopped parsley and serve hot.
