For the Pasta

  • 200 g rotini or fusilli works best for flavor

For the Eyeballs

  • 150 g mini mozzarella balls creamy texture
  • 1 piece black olive sliced into rounds

For the Veggies

  • 1 cup cherry tomatoes halved
  • 1 piece cucumber diced
  • 1 piece red bell pepper diced
  • 1 piece yellow bell pepper diced
  • 50 g black olives sliced
  • 50 g green olives sliced

For the Dressing

  • 3 tablespoon olive oil enhances flavor
  • 2 tablespoon balsamic vinegar adds tangy sweetness
  • 1 teaspoon Italian seasoning herbal goodness
  • salt and pepper to taste

For Garnishing

  • 1 bunch fresh basil leaves chopped

Step-by-Step Instructions

  • Boil a large pot of salted water over high heat. Add the rotini or fusilli and cook until al dente, about 8-10 minutes. Drain and rinse under cold water.
  • Slice the black olive into rounds and press one slice onto each mozzarella ball to create eyeballs. Arrange on the cooled pasta.
  • Dice cucumber, red bell pepper, and yellow bell pepper. Halve the cherry tomatoes. Toss all veggies and olives with the pasta.
  • In a small bowl, whisk together olive oil, balsamic vinegar, Italian seasoning, and seasoning to taste.
  • Pour the dressing over the salad mix and gently toss to ensure everything is well-coated.
  • Sprinkle chopped basil leaves on top. Cover and refrigerate for at least 30 minutes before serving.
