  • Wash and chop bok choy into bite-sized pieces. Mince garlic and slice ginger finely. Dice carrots and chop green onions for garnish.
  • In a large pot, heat olive oil over medium heat. Stir in minced garlic and sliced ginger, cooking for 1-2 minutes.
  • Add chopped carrots, stirring for 3-4 minutes until they soften. Then add bok choy and stir for another 2 minutes.
  • Pour in vegetable broth and bring to a simmer. Stir in soy sauce, salt, and pepper to taste.
  • Taste the broth, adjust seasoning, then ladle into bowls and garnish with green onions.
