  • 1 cup fresh parsley finely chopped
  • ½ cup fresh cilantro finely chopped
  • 2-3 cloves garlic minced
  • 1 small red onion finely chopped
  • 1 cup olive oil high-quality extra virgin
  • ¼ cup red wine vinegar
  • 1 tablespoon smoked paprika
  • ½ teaspoon red pepper flakes adjust to taste

Step-by-Step Instructions

  • Finely chop 1 cup of fresh parsley and ½ cup of fresh cilantro in a large mixing bowl. Mince 2-3 cloves of garlic and chop a small red onion finely.
  • Sprinkle in 1 tablespoon of smoked paprika and ½ teaspoon of red pepper flakes. Stir in salt and pepper to taste.
  • Pour in 1 cup of olive oil and ¼ cup of red wine vinegar and mix thoroughly.
  • Taste the chimichurri and adjust the seasoning as needed with salt, pepper, or red pepper flakes.
  • Allow the chimichurri to rest for about 10 minutes before serving.
  • Drizzle it over grilled meats or use it as a dipping sauce.

Notes
