Ingredients

  • 8 ounces pasta e.g., spaghetti or penne
  • 2 cups cherry tomatoes
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • ½ cup basil leaves
  • ¼ teaspoon red pepper flakes
  • 1 teaspoon salt
  • ½ teaspoon freshly ground pepper
  • ½ cup cheese e.g., Parmesan

Instructions

  • Begin by preparing the tomato mixture. In a large mixing bowl, combine the halved cherry tomatoes, extra virgin olive oil, minced garlic, fresh basil leaves, red pepper flakes, salt, and freshly ground pepper. Gently toss everything together until the tomatoes are well coated. Cover the bowl with plastic wrap and allow it to sit at room temperature for about 4 hours.
  • When you're ready to serve your Easy Summer Garden Pasta, fill a large pot with water, add a splash of olive oil, and about 2 tablespoons of salt. Bring the water to a rolling boil over high heat. Once boiling, add the pasta of your choice and cook according to the package directions until it’s al dente, usually about 2 to 3 minutes.
  • After the pasta reaches that perfect al dente texture, carefully drain it using a colander, but do not rinse the pasta. Immediately transfer the drained pasta into the bowl with your marinated tomato mixture.
  • Next, add your grated cheese and toss everything together thoroughly. Combine the pasta, tomatoes, and cheese until everything is evenly mixed.
  • For serving, scoop generous portions of your delicious Summer Garden Pasta into large bowls. Top with extra cheese and a few fresh basil leaves. Enjoy it while it’s warm.

Notes

  • Flavor Development: Allow the tomato mixture to sit for at least 4 hours.
  • Pasta Perfection: Start testing for doneness a minute before the package states to avoid overcooking.
  • Toss Hot: Combine the hot pasta with the tomato mixture immediately after draining.
  • Ingredient Swaps: Don’t hesitate to use different ingredients or veggies.
  • Flavor Boosting: A sprinkle of fresh herbs at the end can enhance the freshness.
