  • 1 medium Cucumber sliced thin
  • ½ cup Cherry tomatoes halved
  • ¼ cup Feta cheese crumbled
  • 1 cup Fresh baby spinach

  • Gather all your ingredients. Rinse the cucumber and cherry tomatoes under cold water. Slice the cucumber thinly and cut the cherry tomatoes in half. Set aside.
  • Heat a dry skillet over medium heat and lightly toast the mini whole wheat pitas for about 30 seconds on each side.
  • Gently open each warm pita and scoop a generous dollop of hummus into each pocket.
  • Layer in the fresh fillings starting with cucumbers, followed by cherry tomatoes, crumbled feta cheese and fresh baby spinach.
