Instructions

Step‑by‑Step Instructions

  • In a large skillet, heat 2 tablespoons of olive oil over medium heat until shimmering, about 1-2 minutes.
  • Season both sides of 1 pound of chicken breasts with ½ teaspoon salt, ¼ teaspoon black pepper, and ¼ teaspoon red pepper flakes.
  • Carefully place the seasoned chicken breasts in the skillet and cook for about 5-6 minutes per side, or until golden brown and cooked through.
  • Transfer the chicken to a plate and let it rest for a few minutes.
  • In the same skillet, add minced garlic and sauté for 1-2 minutes until fragrant and golden.
  • Pour in ½ cup of chicken broth and scrape up any browned bits from the bottom. Bring to a gentle simmer for about 1 minute.
  • Stir in 1 cup of heavy cream and simmer for 3-4 minutes until it starts to thicken.
  • Add in ½ cup of grated Parmesan cheese and stir until it melts and the sauce becomes silky smooth.
  • Taste the sauce and adjust seasoning with additional salt, black pepper, and red pepper flakes if needed.
  • In a separate pot, bring salted water to a boil and cook 1 package of gnocchi according to package instructions until they float.
  • Drain the gnocchi and add them to the skillet with the creamy sauce, stirring gently to coat.
  • Slice the rested chicken and add it back into the skillet, stirring everything together gently.
  • Let the skillet simmer on low heat for an additional 2-3 minutes.
  • Sprinkle 2 tablespoons of freshly chopped parsley over the top and serve hot.

Notes

This dish tastes even better the next day and makes for great leftovers. For a thicker sauce, simmer longer after adding cream and cheese.
