Preparation

  • Whisk together the eggs, milk, salt, and pepper. Pour onto a parchment-lined baking sheet and bake for about 30 minutes until set. Cut into portions.
  • Toast the English muffins with butter until lightly golden.
  • Assemble the sandwiches by layering bacon or sausage, baked egg, and adding cheese if desired.
  • Wrap each sandwich tightly in parchment or plastic wrap and store in a freezer bag.
  • Freeze for up to 3 months and reheat directly from the freezer or thaw overnight.
