Ingredients
  

For the Spicy Chickpeas

  • 2 cans canned chickpeas drained and rinsed
  • 2 tablespoons olive oil extra virgin for richer taste
  • 1 teaspoon paprika smoked for extra kick
  • 1 teaspoon cumin
  • 0.5 teaspoon cayenne pepper adjust to taste
  • 1 teaspoon salt
  • 1 teaspoon black pepper

For the Salad Base

  • 6 cups mixed greens arugula, spinach, and romaine
  • 1 cup cherry tomatoes halved
  • 0.5 medium red onion thinly sliced
  • 1 medium cucumber diced
  • 1 medium red bell pepper diced

For the Tangy Avocado Dressing

  • 1 medium avocado ripe
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup for sweetness
  • 3 tablespoons water to adjust consistency
  • 2 tablespoons fresh cilantro or parsley for garnish

Instructions
 

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • In a mixing bowl, combine drained chickpeas with olive oil, paprika, cumin, cayenne pepper, salt, and black pepper. Toss to coat evenly.
  • Spread the seasoned chickpeas on a baking sheet and bake for 20-25 minutes, shaking halfway through.
  • In a salad bowl, combine mixed greens, cherry tomatoes, red onion, cucumber, and red bell pepper. Toss gently.
  • In a blender, blend avocado, lime juice, honey, and water until smooth. Adjust water to desired consistency. Season to taste.
  • Cool the baked chickpeas for a few minutes before adding to the salad.
  • Add chickpeas to salad and drizzle with avocado dressing. Toss to combine.
  • Garnish with chopped cilantro or parsley before serving.

Notes

Store leftovers separately in an airtight container for up to 3 days.
