Step‑by‑Step Instructions for Italian Meatball Soup

  • In a large bowl, combine ground beef or turkey, breadcrumbs, Parmesan cheese, egg, garlic, dried Italian herbs, salt, and black pepper. Mix until well blended.
  • Roll the mixture into small meatballs, about 1 inch in diameter, and set them aside.
  • In a large pot, heat olive oil over medium-high heat, then add the meatballs in batches. Brown for 5-7 minutes.
  • Add diced carrots, celery, and potatoes to the pot. Sauté for about 5 minutes until softened.
  • Pour in broth and bring to a boil. Reduce heat and simmer for about 10 minutes.
  • Return meatballs to the pot, stir in heavy cream and frozen peas. Simmer for an additional 10-15 minutes.
