Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone mat.
  • In a medium bowl, whisk together the chilled pumpkin puree, cold milk, cold egg, and vanilla extract until smooth. Keep in the fridge while preparing dry ingredients.
  • In a large bowl, combine flour, brown sugar, white sugar, cinnamon, cloves, ginger, nutmeg, baking soda, baking powder, and salt. Stir until well mixed.
  • Add cold, diced butter to the dry mixture and work it in until the mixture resembles coarse crumbs.
  • Make a well in the center of the dry ingredients and pour in the chilled pumpkin mixture. Mix gently until a soft dough forms.
  • Turn the dough onto a floured surface, fold it over itself 2-3 times, and shape it into an 8x5 inch rectangle about 1 inch thick. Cut into 6 squares.
  • Place the squares on the baking sheet and bake for 17-18 minutes until lightly golden.
  • Let the scones rest on the baking sheet for 10 minutes before transferring to a wire rack.
  • Whisk together powdered sugar and heavy cream for the glaze until smooth. Adjust consistency with extra cream if needed.
  • Spread glaze over each scone and let it set for about 5-10 minutes.
