  • Preheat your oven to 350°F (175°C) and grease and flour a 9×13-inch baking pan.
  • In a medium bowl, combine ½ cup of all-purpose flour, ½ cup of packed brown sugar, ¼ cup of melted unsalted butter, and 1 teaspoon of ground cinnamon. Mix until crumbly and set aside.
  • In a large bowl, cream together ½ cup of softened unsalted butter and 1 cup of granulated sugar until light and fluffy (3-4 minutes). Incorporate the mashed ripe bananas.
  • Add 2 large eggs one at a time, beating well after each addition.
  • Stir in 1 cup of cooled brewed coffee and 1 teaspoon of vanilla extract until combined.
  • In a separate bowl, whisk together 2 cups of all-purpose flour, 1 teaspoon of baking soda, ½ teaspoon of salt, and 1 teaspoon of ground cinnamon. Gradually add to the wet mixture, stirring until just combined.
  • Pour the batter into the prepared baking pan, spreading it evenly.
  • Sprinkle the crumb topping over the batter evenly.
  • Bake for 40 to 45 minutes, checking for doneness with a toothpick.
  • Let the cake cool in the pan for 15-20 minutes before transferring to a wire rack to cool completely.

Notes

Use very ripe bananas for maximum sweetness and moisture. Don't overmix the batter to keep it fluffy.
