For the Cake Batter

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a 12-cup bundt pan by greasing it well with Baker’s Joy or a non-stick spray.
  • In a medium mixing bowl, whisk together the all-purpose flour, baking powder, salt, cinnamon, and nutmeg until well-blended.
  • In the bowl of a stand mixer, combine the room-temperature unsalted butter, brown sugar, and granulated sugar. Beat on medium speed for about 3-5 minutes until fluffy.
  • Add the eggs to the butter-sugar mixture one at a time, mixing in the vanilla extract after all eggs have been added.
  • Gradually add the flour mixture to the wet batter in three parts, mixing on low speed. Slowly add the cup of apple cider until smooth.
  • Carefully scrape the batter into your prepared bundt pan and bake for 40-50 minutes, or until a toothpick comes out clean.
  • While the cake bakes, pour 2 cups of apple cider into a saucepan, boil, reduce heat, and cook until thickened to about ⅓ cup. Stir in the salted butter until melted.
  • While the cake is still warm, brush the cider coating mixture over the surface and sprinkle with the sugar mixture.
  • Enjoy your Apple Cider Cake warm or at room temperature.
