Step-by-Step Instructions for Crispy Smashed Carrots

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Bring a large pot of salted water to a rolling boil. Add thick rounds of peeled carrots and cook for 10–12 minutes until fork-tender.
  • Drain the carrots and cool slightly. Transfer them to the baking sheet and smash each carrot with the bottom of a glass until flattened but intact.
  • Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and black pepper. Top with grated Parmesan cheese.
  • Roast in the oven for 20–25 minutes, flipping halfway through for even browning.
  • Remove from oven, garnish with fresh parsley, and serve hot!
