Step-by-Step Instructions

  • Preheat your oven to 375°F (190°C).
  • Fit the thawed pie crust into a 9-inch pie dish and prick the bottom with a fork.
  • Rinse cranberries under cold water, discarding stems or blemished berries.
  • In a bowl, combine cranberries with ¼ cup of granulated sugar and 1 tablespoon of cornstarch. Toss gently.
  • In another bowl, whisk together ¾ cup of sugar, eggs, heavy cream, vanilla, cinnamon, and salt until smooth.
  • Pour the cranberry mixture into the pie crust, then pour the custard mixture over it.
  • Bake for 40-45 minutes until custard is set and top is lightly golden.
  • Let it cool on a wire rack for at least 1 hour.
  • Serve warm or chilled with whipped cream or vanilla ice cream.

Notes

Be sure to allow the pie to cool before slicing for cleaner cuts. Watch over the last 10 minutes of baking to avoid overbaking.
