  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a medium bowl, combine 2 ½ cups of all-purpose flour, 1 teaspoon of baking powder, and ½ teaspoon of salt.
  • In a large bowl, beat together 1 cup of softened unsalted butter and 1 cup of packed brown sugar until light and fluffy.
  • Add 1 large egg and 1 teaspoon of vanilla extract, mixing until fully incorporated.
  • Gradually incorporate the dry ingredient mixture into the wet mixture until a dough forms.
  • Cover the dough with plastic wrap and chill in the refrigerator for 15-20 minutes.
  • Roll out the chilled dough to about ¼ inch thick on a floured surface.
  • Cut out rectangles or squares and place them on the lined baking sheet with space in between.
  • Bake the cookies for 15-20 minutes or until lightly golden around the edges.
  • Let the cookies cool for about 10 minutes before transferring to a wire rack.
  • Mix 1 cup of powdered sugar with 2-3 tablespoons of milk until smooth for the glaze.
