  • ¾ cup watermelon juice freshly blended from watermelon cubes
  • 1 cup glutinous rice flour provides chewy texture
  • 1 tablespoon tapioca starch enhances chewiness
  • 2 tablespoons maple sugar natural sweetener
  • 1 tablespoon avocado oil adds moisture and richness
  • Extra glutinous rice flour for dusting

Step-by-Step Instructions

  • Blend fresh watermelon cubes until smooth. Strain through a sieve to catch seeds and pulp, measure out ¾ cup watermelon juice.
  • In a mixing bowl, whisk together glutinous rice flour, tapioca starch, and maple sugar. Create a well, pour in watermelon juice and avocado oil. Stir until smooth.
  • Heat a non-stick pan over low-medium heat, add avocado oil, and pour in the mochi mixture. Stir constantly for about 3-4 minutes until thick and glossy.
  • Transfer the thickened mochi mixture onto parchment paper and shape into a square, about 15 x 15 cm. Cover and refrigerate for 1-2 hours.
  • Dust the chilled mochi with extra glutinous rice flour. Slice into bite-sized cubes, dusting each piece with flour again.
  • Enjoy the freshly made Watermelon Mochi immediately after slicing for the best texture.
