  • ½ cup chopped artichokes

  • ½ cup heavy cream
  • 2 cups fresh spinach

  • Add peeled and deveined shrimp. Cook for about 2-3 minutes on each side until pink and opaque. Transfer shrimp to a plate.
  • Pour in white wine, scraping the bottom with a wooden spoon. Allow to simmer for about 2 minutes.
  • Stir in chopped artichokes and sun-dried tomatoes. Cook for an additional 2 minutes.
  • Reduce heat to low and add heavy cream. Gently stir, then add fresh spinach and cook until wilted, about 2-3 minutes.
  • Season with salt and pepper to taste, and simmer for another minute before serving.
