Step-by-Step Instructions

  • Preheat your oven to 400°F (200°C). Cut the spaghetti squash in half lengthwise and remove the seeds. Drizzle the insides with olive oil, seasoning with salt and pepper. Place cut-side down on a baking sheet and roast for about 30-40 minutes until tender.
  • Heat olive oil in a skillet over medium heat. Add diced onion and sauté for 5-7 minutes until translucent.
  • Add minced garlic and stir for about 1 minute. Then add ground turkey, cooking for about 5-7 minutes until browned.
  • Stir in chili powder, cumin, smoked paprika, salt, and pepper. Allow the flavors to meld.
  • Add black beans, diced tomatoes with green chilies, and corn. Simmer for about 5 minutes.
  • Once the spaghetti squash is roasted, flip it and rake the flesh into strands. Incorporate these strands into the turkey and vegetable mix.
  • Sprinkle shredded cheese on top. Cover the skillet and allow cheese to melt for a few minutes.
  • Serve in bowls and garnish with fresh cilantro and lime wedges.

Notes

For extra moisture, add a splash of water when reheating leftovers.
