Ingredients
  

For the Pasta

  • 2 cups pasta any shape, small varieties like rotini hold dressing beautifully

For the Salad

  • 1 5 oz can tuna drained
  • ½ cup diced bell pepper adds sweetness and crunch
  • ½ cup diced cucumber brings freshness
  • ¼ cup diced red onion offers a zesty kick
  • ¼ cup cherry tomatoes halved
  • ¼ cup sweet corn drained

For the Dressing

  • 2 tablespoons mayonnaise or Greek yogurt for a lighter option
  • 1 tablespoon lemon juice to brighten the dish
  • salt and pepper to taste

Directions

  • Bring a pot of salted water to a boil. Add 2 cups of pasta and cook according to package instructions, about 8-10 minutes until al dente. Drain and rinse under cold water.
  • In a large mixing bowl, combine the cooled pasta, drained tuna, diced bell pepper, cucumber, red onion, cherry tomatoes, and sweet corn. Gently fold together.
  • In a small bowl, whisk together 2 tablespoons of mayonnaise, 1 tablespoon of lemon juice, and a pinch of salt and pepper until smooth.
  • Pour the dressing over the pasta mixture and toss gently to combine.
  • Serve immediately or refrigerate for at least 30 minutes before serving.

Notes

This salad is perfect for meal prep. Add dressing just before serving to maintain crispness.
