Ingredients

  • 2 cups jasmine or basmati rice Use for the best fluffy texture

For the Shrimp

  • 1 cup shrimp Fresh or frozen, thaw if frozen
  • 4 tablespoons vegetable oil To sear shrimp and vegetables
  • 1 tablespoon garlic Minced

For the Sauce & Veggies

  • ½ cup teriyaki sauce Sweet and savory
  • 2 cups mixed vegetables e.g., bell peppers, broccoli, carrots

For Garnishing

  • 1 tablespoon sesame seeds Optional, for garnish
  • 2 green onions Chopped

Cooking Steps

  • Cook 2 cups of rice according to the package instructions, about 18-20 minutes.
  • In a skillet, heat 4 tablespoons of vegetable oil over medium heat, add 1 tablespoon of minced garlic, and sauté for 1 minute.
  • Add 1 cup of shrimp to the pan and cook for 2-3 minutes until pink, then flip and cook for another 1-2 minutes.
  • Stir in 2 cups of mixed vegetables and cook for 4-5 minutes until vibrant and tender.
  • Pour in ½ cup of teriyaki sauce and simmer for 2-3 minutes to let flavors meld.
  • Serve over rice, topping with shrimp/vegetable mix, sesame seeds, and green onions.

Notes

Store leftovers in an airtight container for up to 3 days. Freeze shrimp and veggies for up to 2 months; reheat gently.
