  • 1 lb prawns peeled and deveined
  • ½ cup red onion thinly sliced
  • ½ cup cherry tomatoes halved
  • 1 whole cucumber diced
  • 1 cup fresh herbs cilantro, mint, and basil

For the Dressing

  • 2 tablespoons fish sauce
  • 2 tablespoons lime juice
  • 1 tablespoon chili paste
  • 1 tablespoon sugar (optional)

Step-by-Step Instructions

  • In a medium bowl, whisk together fish sauce, lime juice, and chili paste. Add sugar if desired and stir until well combined.
  • In a large mixing bowl, combine prawns, red onion, cherry tomatoes, cucumber, and fresh herbs. Gently toss to mix.
  • Pour the dressing over the salad mixture and use tongs to gently toss until all ingredients are well coated.
  • Arrange lettuce leaves on a serving platter and spoon the salad mixture on top. Serve immediately.

Notes

For best results, let the salad chill for a few minutes before serving to allow flavors to meld.
