  • 2 cans (14 ounces each) San Marzano tomatoes or high-quality crushed tomatoes

Step-By-Step Instructions

  • Melt 2 tablespoons of butter in a large pan over medium-high heat. Add garlic, onion, celery, and carrot. Sauté for about 10 minutes until soft and fragrant.
  • Add ground spicy Italian sausage to the pan. Brown the sausage for 6-8 minutes until no pink remains.
  • Sprinkle in oregano and red pepper flakes, along with salt and pepper. Cook for an additional 2-3 minutes.
  • Pour in red wine and scrape up browned bits. Simmer for about 3-5 minutes until reduced.
  • Add San Marzano tomatoes and optional balsamic vinegar. Let sauce simmer for 20-30 minutes.
  • In a separate pot, boil salted water and cook rigatoni until al dente, about 10-12 minutes. Drain the pasta.
  • Combine drained rigatoni with the sauce, tossing well. Adjust consistency with reserved pasta water if needed.
  • Serve garnished with Parmesan cheese and fresh herbs.

Notes

For a complete meal, serve alongside a crisp salad or homemade garlic bread. Consider prepping sauce in advance for richer flavor.
