For the Pasta

  • 8 ounces pasta choose your favorite type, like fettuccine or linguine

For the Scallops

  • 1 pound sea scallops fresh scallops will give you the best taste
  • 3 tablespoons olive oil use extra virgin for a richer flavor

For the Sauce

  • 4 cloves garlic minced
  • 1 cup white wine choose a dry wine like Sauvignon Blanc
  • 1 cup heavy cream for creamy texture and rich flavor
  • 2 tablespoons fresh parsley chopped, adds color and freshness
  • 1 tablespoon lemon juice to brighten flavors

Cooking Instructions

  • Bring a large pot of salted water to a boil, and add 8 ounces of your favorite pasta. Cook according to the package instructions until al dente, typically about 8-10 minutes. Drain and set aside.
  • In a large skillet, heat 3 tablespoons of olive oil over medium-high heat until shimmering. Season scallops with salt and pepper.
  • Carefully add the seasoned scallops, ensuring they are spaced apart. Sear for 2-3 minutes on one side until golden brown, then flip and cook for another 2-3 minutes until opaque.
  • In the same skillet, lower the heat and add 4 cloves of minced garlic. Sauté for about 1 minute until fragrant.
  • Pour in 1 cup of white wine, scraping the bottom with a wooden spoon. Allow to simmer for 2-3 minutes, reducing slightly.
  • Add 1 cup of heavy cream and raise the heat. Simmer for 3-4 minutes until it thickens slightly.
  • Stir in the cooked pasta, seared scallops, 2 tablespoons of chopped parsley, and 1 tablespoon of lemon juice. Toss gently to combine.
  • Taste and adjust seasoning with salt and pepper if needed. Serve immediately, garnished with more parsley.

Notes

For the best taste, use fresh scallops. Adjust the garlic and lemon juice to your preference. The sauce should coat the back of a spoon before serving.
