  • Start by washing the 4 green onions thoroughly, ensuring any dirt is removed. Chop them finely and set the lighter green parts aside for frying later.
  • In a medium bowl, whisk together 2 tablespoons of light soy sauce, 1 tablespoon of dark soy sauce, and 1 tablespoon of sugar until the sugar is fully dissolved.
  • Heat 3 tablespoons of vegetable oil in a pan over medium heat until shimmering. Add half of the finely chopped scallions and fry for approximately 2-3 minutes until golden and crispy.
  • In the same pan, add the remaining chopped scallions and sauté for about 1-2 minutes until fragrant.
  • Bring a pot of salted water to boil. Cook 250 grams of white wheat noodles according to package instructions, usually around 4-6 minutes, until al dente. Drain and rinse with cold water.
  • Combine the drained noodles with the scallion oil and sauce base in a large mixing bowl. Toss gently for 1-2 minutes until the noodles are evenly coated.
  • Transfer the coated noodles to serving plates and finish with the crispy fried scallions on top.
