  • In a large bowl, combine 2 ½ cups of all-purpose flour, 1 tablespoon of granulated sugar, and 1 teaspoon of salt. Blend thoroughly.
  • Add 1 cup of chilled and cubed unsalted butter and mix until resembling coarse crumbs, about 5 minutes.
  • Gradually add 6 to 8 tablespoons of ice water, mixing until the dough holds together. Divide into two discs, wrap, and refrigerate for at least 1 hour.
  • Preheat your oven to 375°F (190°C). Prepare your strawberry filling in the meantime.
  • In a bowl, combine 4 cups of hulled and halved fresh strawberries, ¾ cup of granulated sugar, 3 tablespoons of corn starch, 1 tablespoon of lemon juice, and 1 teaspoon of vanilla extract. Stir gently.
  • Roll out one of the chilled dough discs onto a floured surface. Transfer into the pie pan.
  • Pour the strawberry filling into the crust and dot with 1 tablespoon of unsalted butter.
  • Roll out the second dough disc and cover the pie. Trim excess dough and crimp the edges. Cut slits in the top crust for venting.
  • Brush the top crust with the beaten egg and sprinkle with 1 tablespoon of turbinado sugar if desired.
  • Bake on a baking sheet for 45 to 55 minutes or until the crust is golden brown and the filling is bubbling.
  • Allow the pie to cool on a wire rack for at least 30 minutes before serving.
