  • Preheat the oven to 325°F (160°C) and prepare ramekins on a baking dish.
  • In a medium saucepan, combine 2 cups of heavy cream and 1 cup of pumpkin puree; heat until simmering.
  • In a large bowl, whisk together 6 egg yolks, ½ cup of sugar, 1 teaspoon of vanilla, ½ teaspoon of cinnamon, ¼ teaspoon of nutmeg and ginger, and a pinch of salt.
  • Gradually whisk the warm cream mixture into the egg yolk mixture until smooth.
  • Strain the custard into a measuring cup to ensure a velvety texture.
  • Divide the custard among six ramekins and prepare a water bath in the baking dish.
  • Bake for 30-35 minutes until set around edges and slightly jiggly in the center.
  • Cool the ramekins to room temperature, then refrigerate for at least 4 hours.
  • Before serving, sprinkle sugar over each custard and caramelize using a kitchen torch.

Notes

Use room temperature ingredients for smoother custard and avoid boiling the cream. Always strain for smoothness and use hot water in the water bath for even baking.
