  • In a large mixing bowl, whisk together pumpkin puree, granulated sugar, and brown sugar until smooth. Beat in eggs, vegetable oil, and vanilla extract until fully incorporated.
  • In a separate bowl, sift together all-purpose flour, pumpkin spice, baking soda, and salt. Fold this mixture into the pumpkin mixture until just combined.
  • Preheat your oven to 350°F (175°C) while preparing your muffin tin. Line with paper liners or grease it lightly. Fill each muffin cup about ¾ full with the batter.
  • In a medium bowl, beat cream cheese until smooth. Add granulated sugar, egg yolk, and vanilla extract; mix until well combined.
  • Spoon about 1 tablespoon of cream cheese mixture onto each muffin and gently swirl using a toothpick.
  • Bake for 18 to 20 minutes, checking for doneness with a toothpick. Muffins should be golden brown.
