  • Preheat your oven to 350°F (175°C) and prepare a 12-cup muffin tin with liners or spray.
  • In a large bowl, whisk together the pumpkin puree, eggs, melted coconut oil, brown sugar, granulated sugar, and vanilla until smooth.
  • In a separate bowl, combine the gluten-free flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. Whisk to combine.
  • Gradually mix the dry ingredients into the wet ingredients, stirring gently until just combined.
  • Fold in the gluten-free chocolate chips until evenly distributed throughout the batter.
  • Divide the batter among the muffin cups, filling each about ¾ full.
  • Bake for 18-20 minutes or until a toothpick inserted comes out clean. Watch for golden tops.
