Filling

Tortillas

  • 1 tablespoon olive oil for greasing baking dish

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with olive oil.
  • In a large mixing bowl, combine shredded chicken, cottage cheese, cheddar cheese, Monterey Jack cheese, cilantro, chili powder, cumin, garlic powder, salt, and black pepper. Mix well.
  • Pour half of the low carb enchilada sauce into the greased baking dish, spreading it evenly across the bottom.
  • Place one low carb tortilla on a clean surface, spoon about ⅓ cup of the filling mixture down the center, and roll it up tightly. Place seam-side down in the baking dish. Repeat with remaining tortillas.
  • Drizzle remaining enchilada sauce over the rolled tortillas and sprinkle any leftover cheese on top.
  • Bake in the preheated oven for 20 minutes until the sauce is bubbling and cheese is melted.
  • Remove from oven and let rest for 5 minutes before serving.
