Ingredients
  

For the Marinade

  • 1 cup pomegranate juice
  • ½ cup orange juice
  • ¼ cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon apple cider vinegar
  • 2 teaspoons minced garlic
  • 1 teaspoon grated ginger
  • to taste salt
  • to taste pepper

For the Chicken

  • 4 pieces chicken breasts boneless
  • 2 tablespoons olive oil

For Garnish

  • ½ cup fresh pomegranate seeds
  • 2 slices orange
  • 2 tablespoons chopped parsley

Instructions
 

Preparation

  • In a large mixing bowl, whisk together all marinade ingredients until well combined.
  • Add the chicken breasts to the marinade, cover, and refrigerate for at least 1 hour.
  • Preheat your grill or skillet over medium heat for approximately 5 minutes.
  • Remove chicken from the marinade and discard the marinade.
  • Add olive oil to the cooking surface and ensure it's heated.
  • Cook the chicken for approximately 6-7 minutes on each side or until it reaches 165°F.
  • Pour the reserved marinade into a small saucepan, bring to a boil, then simmer for 5-7 minutes until thick.
  • Drizzle the thickened glaze over each chicken breast and coat well.
  • Transfer to a serving platter and garnish with pomegranate seeds, orange slices, and parsley.
  • Serve immediately for best flavor.

Notes
