Cooking Instructions

  • Begin by taking boneless, skinless chicken breasts and pounding them between two sheets of plastic wrap until even, about ½ inch thick.
  • In a bowl, mix together prepared pesto, olive oil, garlic powder, salt, and black pepper until well combined. Coat the chicken breasts with this marinade and let it marinate in the refrigerator for at least 30 minutes or up to 2 hours.
  • While the chicken marinates, heat a skillet over medium-high heat. Add a teaspoon of olive oil.
  • Once the pan is hot, add the marinated chicken breasts and sauté for 5–7 minutes on each side until cooked through and golden brown.
  • Transfer the cooked chicken to a cutting board and let it rest for 5 minutes.
  • Slice the chicken into thin strips or bite-sized cubes.
  • Wash and dry the lettuce leaves carefully.
  • Place a generous amount of sliced chicken into each lettuce cup.
  • Top the chicken with diced cherry tomatoes, sliced red onion, and crumbled feta cheese if using.
  • Drizzle with balsamic glaze if desired.
  • Serve immediately for the best flavor and texture.
