  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon cayenne pepper adjust to taste
  • 1 teaspoon fine sea salt to taste
  • 1 teaspoon freshly ground black pepper

For the Tahini-Honey Sauce

  • ½ cup tahini
  • cup runny honey
  • 2 tablespoons fresh lemon juice
  • 1 clove garlic finely grated or minced
  • ¼ cup warm water to desired consistency
  • ½ teaspoon fine sea salt

For Finishing and Serving

  • ¼ cup toasted sliced almonds or chopped pistachios
  • ¼ cup golden raisins or chopped Medjool dates
  • ¼ cup chopped fresh cilantro
  • ¼ cup chopped fresh flat-leaf parsley
  • 1 teaspoon zest of ½ lemon optional
  • ¼ cup pomegranate seeds optional
  • extra tablespoons honey for drizzling
  • extra tablespoons olive oil for drizzling

Step-by-Step Instructions

  • Preheat your oven to 425°F (220°C) and prepare a baking sheet.
  • Line a large baking sheet with parchment paper.
  • Cut the cauliflower into medium florets and pat dry.
  • In a mixing bowl, whisk together olive oil and spices to create a spice oil.
  • Toss the cauliflower florets in the spice oil until well coated.
  • Spread cauliflower in a single layer on the baking sheet.
  • Roast the cauliflower for 20-25 minutes until tender and golden brown.
  • While roasting, mix tahini, honey, lemon juice, garlic, and salt to make the sauce.
  • Gradually add warm water to reach the desired creamy consistency.
  • Toast sliced almonds or pistachios in a skillet over medium heat for 2-4 minutes.
  • Chop herbs, zest a lemon, and prepare any pomegranate seeds for topping.
  • Once roasted, transfer cauliflower to a serving platter and drizzle with tahini-honey sauce.
  • Sprinkle toppings over the cauliflower and finish with extra honey and olive oil if desired.
  • Serve warm or at room temperature.

Notes

For best results, ensure your cauliflower is fresh and properly dried before roasting.
