  • Season the 4 halibut fillets with salt and black pepper on both sides. Allow the seasoned fish to rest at room temperature for about 15 minutes.
  • In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Place the halibut fillets into the skillet, skin-side down. Cook for 4–5 minutes on each side until golden brown.
  • Add 1 cup of white wine and 2 tablespoons of finely chopped shallots to the skillet. Bring to a boil and allow to reduce by half, about 3 minutes.
  • Stir in 1 tablespoon of lemon zest and ¼ cup of fresh lemon juice into the wine reduction. Simmer for an additional 2 minutes.
  • Reduce heat to medium-low and gradually whisk in ½ cup of chilled unsalted butter until fully incorporated.
  • Taste the beurre blanc and adjust seasoning with salt and freshly cracked black pepper.
  • Plate one halibut fillet on each plate, drizzle with the beurre blanc, and garnish with freshly chopped parsley.
