  • In a large mixing bowl, combine 2 cups flour, 1 teaspoon salt, 1 tablespoon sugar, 1 teaspoon baking powder, and 1 teaspoon yeast. Stir until evenly mixed.
  • Pour ¾ cup warm water into the dry mixture, add ½ cup Greek yogurt and 1 tablespoon olive oil. Stir gently until the dough comes together.
  • Knead the dough in the bowl, then transfer to a floured surface. Knead for 5 to 7 minutes until smooth and elastic.
  • Shape dough into a ball, place in a bowl, cover with a damp towel, and let it rise for 30 to 45 minutes.
  • Punch down the dough, divide into 6 portions, roll into balls, and create a hole in the center to form bagels.
  • Preheat oven to 375°F (190°C) and boil water in a large pot. Drop in bagels to cook.
  • Boil bagels for 1 to 2 minutes per side, then transfer to a parchment-lined baking sheet.
  • Brush tops with beaten egg and sprinkle with sesame seeds if desired.
  • Bake for 20 to 25 minutes until golden brown.
  • Remove from oven, let cool on a wire rack, then serve.
