Ingredients
  

For the Pasta

  • 9 oz fettuccine gives the dish its delightful, chewy base

For the Salmon

  • 2 fillets salmon, skinless provides rich flavors and healthy omega-3 fatty acids
  • 1 tablespoon olive oil for sautéing
  • salt and pepper to taste

For the Sauce

  • 1 tablespoon butter to enrich the dish
  • 3 cloves garlic, minced infuses savory depth
  • 1.5 cups cherry tomatoes, halved adds sweetness
  • 1 teaspoon chili flakes optional for heat
  • 0.5 cups heavy cream for a luxuriously creamy texture
  • 0.25 cups Parmesan, grated adds rich umami flavor
  • 0.25 cups pasta water, reserved to adjust sauce consistency

For Garnish

  • fresh parsley, chopped for a vibrant finish

Cooking Instructions

  • Bring a large pot of salted water to a rolling boil. Add fettuccine and cook according to package instructions until al dente, about 8-10 minutes. Reserve ¼ cup pasta water, then drain fettuccine and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Season salmon with salt and pepper, then add to skillet. Cook for 4-5 minutes each side until golden brown and easily flakes with a fork. Remove, let rest, then flake into pieces.
  • Return skillet to medium heat and melt butter. Add minced garlic and sauté for about 30 seconds until fragrant. Toss in halved cherry tomatoes and chili flakes (if using), cooking for 4-5 minutes until tomatoes soften.
  • Pour in heavy cream and bring to a gentle simmer, stirring to combine. Add grated Parmesan and reserved pasta water, mixing until the sauce thickens slightly, about 2-3 minutes.
  • Add drained fettuccine and flaked salmon to the sauce, tossing gently for 1-2 minutes until well coated.
  • Remove from heat. Serve garnished with chopped parsley. Enjoy warm!

Notes

Store leftovers in an airtight container for up to 3 days. Reheat with a splash of cream to revive the sauce.
