  • ½ cup cooking oil Can substitute with applesauce
  • 2 large eggs
  • 1 cup sugar Or replace with brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup pumpkin puree The star ingredient
  • 1 ¼ cups chocolate chips Mix dark and semi-sweet
  • 1 spray oil spray For greasing the pan

Step-by-Step Instructions

  • Preheat the oven to 350°F (175°C).
  • Whisk together dry ingredients in a medium bowl.
  • Combine wet ingredients in a large bowl and mix until smooth.
  • Fold in chocolate chips into the wet mixture.
  • Gradually add dry ingredients to wet mixture and stir until combined.
  • Spray loaf pan with oil spray.
  • Pour batter into the prepared loaf pan and sprinkle remaining chocolate chips on top.
  • Bake for 50-60 minutes until a toothpick comes out clean.

Notes

Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
