Ingredients
  

For the Filling

  • 8 oz cream cheese softened
  • ½ cup Greek yogurt
  • 2 tablespoons fresh dill chopped
  • ½ teaspoon garlic powder
  • 1 tablespoon lemon juice
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Assembly

  • 1 English cucumber
  • 8 slices bread white, whole grain, or rye

Instructions

  • Rinse the cucumber under cold water and slice it into thin rounds, about ⅛ inch thick.
  • In a medium mixing bowl, combine cream cheese, Greek yogurt, fresh dill, garlic powder, salt, black pepper, and lemon juice. Blend until smooth.
  • Spread the creamy filling onto each slice of bread evenly.
  • Place cucumber slices on half of the bread slices, then cover with the other half.
  • Cut each sandwich into small, bite-sized pieces and arrange on a platter.

Notes

Best enjoyed fresh but can be stored in the fridge for up to 3 days. Separate cucumbers from bread to prevent sogginess.
