  • Heat 1 tablespoon of olive oil in a large skillet over medium-high heat.
  • Season salmon fillets with salt and pepper, then place them in the skillet and cook for about 4-5 minutes per side until golden and easily flaked.
  • Remove cooked salmon from the skillet and set aside.
  • In the same skillet, sauté minced garlic for about 1 minute, then add halved cherry tomatoes and cook for 2-3 minutes.
  • Stir in the fresh spinach, cooking until it wilts, about 1 minute.
  • Pour in heavy cream and chicken broth, stirring, then add grated Parmesan cheese and Italian seasoning, simmering for 3-5 minutes until thickened.
  • Return salmon fillets to the skillet, spooning sauce over each piece.
  • Let simmer gently for an additional 2-3 minutes.
  • Remove from heat and garnish with fresh basil, serving with sides such as pasta, rice, or bread.
