Ingredients
  

For the Salad

  • 2 cups Boiling Water Essential for dissolving gelatin
  • 2 packages (0.3 ounces each) Sugar-Free Cherry-Flavored Gelatin Mix Can substitute with raspberry or lime flavored
  • 1 can (16 ounces) Jellied Cranberry Sauce Fresh or homemade cranberry sauce can be used
  • 1 can (20 ounces) Crushed Pineapple Opt for pineapple packed in juice for a lighter taste
  • ½ cup Chopped Pecans Can substitute with walnuts or almonds, or omit for a nut-free version

Instructions
 

Directions

  • Boil 2 cups of water in a pot, then pour over the sugar-free cherry-flavored gelatin mix in a mixing bowl. Stir for 2-3 minutes until dissolved.
  • Mix the jellied cranberry sauce into the dissolved gelatin mixture until smooth, then fold in the drained crushed pineapple.
  • Gently fold in ½ cup of chopped pecans to the mixture.
  • Pour the mixture into a mold or baking dish and refrigerate for at least 3-4 hours to set.
  • Once set, serve in squares or individual servings, optionally topped with whipped cream.

Notes

Prepare ahead of time to enjoy with loved ones. Store in an airtight container for up to one week.
