Ingredients
  

For the Broth

  • 4 cups low sodium chicken broth homemade broth can add a personal touch
  • 2 inches ginger cut into ¼ inch thick pieces
  • 13.5 oz coconut milk opt for unsweetened for optimal results
  • 3 tablespoons fish sauce soy sauce is a perfect vegetarian substitute
  • 2 teaspoons light brown sugar regular sugar works too

For the Proteins

  • 1 pound boneless skinless chicken breast thinly sliced
  • 8 pieces medium-sized shrimp shelled and deveined

For the Soup

  • 4 pieces Thai chilies stems off
  • 6 tablespoons fresh lime juice from approximately 3-4 limes
  • 2 cups bean sprouts optional
  • ¾ pound fresh thick rice noodles follow package instructions if pre-packaged

For Garnishing

  • ¾ cup fresh cilantro leaves packed, can substitute with basil or parsley

Preparation Steps

  • In a large pot, combine 4 cups of low sodium chicken broth and the sliced ginger. Bring to a rapid boil over high heat, then reduce heat to medium and let it simmer for 10 minutes.
  • After simmering, carefully stir in the 13.5 oz of coconut milk and increase heat slightly to bring it back to a gentle simmer.
  • Next, add 1 pound of thinly sliced boneless skinless chicken breast and the 8 shelled and deveined medium-sized shrimp into the simmering mixture. Cook for about 3 minutes.
  • Gradually mix in 3 tablespoons of fish sauce, 2 teaspoons of light brown sugar, and 4 Thai chilies. Pour in the juice of about 3-4 limes (6 tablespoons) and stir in the optional 2 cups of bean sprouts and half of the packed cilantro leaves.
  • Now, add ¾ pound of fresh thick rice noodles to the pot. Allow the noodles to cook for about 2 minutes.
  • Finally, ladle the soup into bowls and garnish with the remaining cilantro leaves.

Notes

Use fresh lime juice and ginger for maximum flavor. Adjust Thai chilies according to your spice preference. Store leftovers with noodles separate to maintain texture.
